ABSTRACT
This study aimed to explore other possibilities in sugar production by analyzing the sugar content of papaya and sweet potato extracts. The researchers came up with possible sources for sugar in sugar production basing on the fact that fruits, such as papaya and sweet potato, and other plants contain appreciable amount of sugar. The study was conducted at the Research Laboratory of Passi Sugar. The study was conducted at the Research Laboratory of Passi Sugar Central, San Erique, Iloilo on the month of February 2000.
Results showed that papaya contains low amount of fructose, which is the sweetest form of sugar, ang therefore a good source of sugar. On the other hand, sweet potato was found to contain low amount of glucose. The researchers concluded that sweet potato was not a good source of sugar.
